An enzyme is not a microbe
Apple browning is not a demonstration of bacteria growing.
An enzyme can speed a reaction without being a living organism.
In cut apple tissue, enzymes help reactions associated with oxygen produce browning. Enzymes are molecules; they are not tiny living creatures. A change in apple color therefore answers a different question from whether harmful microbes are present, and the apple activity does not establish food safety.
