Retire the tongue map

Taste qualities are not confined to separate tongue zones.

Sweet does not belong only at the tip of your tongue.

The familiar diagram assigning sweet, sour, salty and bitter to separate tongue regions is misleading. Types of taste cells are distributed across the tongue. A useful flavor notebook describes the qualities noticed without relying on a map of exclusive taste zones.
