Baker’s yeast is a living ingredient.
Baker’s yeast is a single-celled fungus, not a tiny seed or a bacterium.
With suitable moisture and conditions, yeast uses sugars and releases carbon dioxide. The beige granules are a way of supplying the organism for baking. Thinking of yeast as living helps explain why its condition and the preparation method matter, rather than treating it as an interchangeable chemical leavener.
